They have a sweet, nutty, earthy flavor and have been said to taste like water chestnuts when raw, and a mixture of potato and artichoke hearts when cooked.
Jerusalem artichokes can grow almost everywhere; they do best in full sun and well-drained soil.
Plant the tubers deep enough to cover the soil, and they are quite drought-tolerant.
More nutrients and non-invasive, Jerusalem artichokes will not take over your garden.
