They have a sweet, nutty, earthy flavor and  have been said to  ttaste like water chestnuts  when raw,and mixture of potato and Artichokes heart when cooked .

Jerusalem Artichokes thecan grow almost every where, they do best  in full sun and well drained soil..

Plant the tubers deep enough to cover the soil, and they are quite drought-tolerant
